Arkansas Black Apple Tart

Happy Thanksgiving. Make this tart with whatever apples you like, but if you can find Arkansas Black apples (these were from the store known as “Whole Paycheck”) buy lots of them– they keep in the crisper drawer a long time, and get blacker and sweeter with age. They are sweet/ tart– great for baking, but also nice and crisp for eating.  Thank you Johnny Appleseed! I sliced mine here on the mandolin– but I have made this tart with thicker slices, and it was still very good.  The crust is a super buttery sweet tart pastry from Mark Bittman in The New York Times.  The recipe made enough for a very simple 10 inch tart, or a folded edge/ rustic 9 inch tart. Christmas Pie

When I was a kid, I remember taking a bite of mince meat pie wondering why this would be a dessert, and being very surprised at how yummy it was.  I am sure it was some frozen store-bought version, but I thought it was just so amazing that they had made meat taste like fruit and spices.  (Little did I know it had no meat whatsoever in it.) The mixture of fruit and meat with strong spices was brought to England from the Middle East during the crusades.  It became a Catholic custom to eat it at Christmas, and during the English Civil War, was outlawed by Puritan leaders.  According to an excellent wikipedia page on Mince Pie, in his History of the Rebellion, Marchamont Needham wrote…

Thanksgiving Round-up

A list is being made.  A grouchy possum is coming to the store with me.  Here are things I am making for the big meal on Thursday, as well as some other things you might want to consider making.  Titles of the photos are links to recipes. I know we have already sprung forward with fresh strawberry season here, but I needed to embrace our winter crops a little longer.  Winter is so plentiful here.  In particular, our Rio Grande Valley Citrus is very special. Orange zest may be my all time favorite ingredient in baking.  And although you can walk around massive tables at Central Market (aka the Gucci-B) of literally dozens of varieties of citrus from all over the world, the small and kind of ugly scarred little oranges from Texas are superior in flavor, sweetness, and juiciness in any contest.  This is in part because they are not shipped around the world, and citrus loses a lot of nutritional value the longer it sits around, endures changes in…
