Arkansas Black Apple Tart

Happy Thanksgiving. Make this tart with whatever apples you like, but if you can find Arkansas Black apples (these were from the store known as “Whole Paycheck”) buy lots of them– they keep in the crisper drawer a long time, and get blacker and sweeter with age. They are sweet/ tart– great for baking, but also nice and crisp for eating.  Thank you Johnny Appleseed! I sliced mine here on the mandolin– but I have made this tart with thicker slices, and it was still very good.  The crust is a super buttery sweet tart pastry from Mark Bittman in The New York Times.  The recipe made enough for a very simple 10 inch tart, or a folded edge/ rustic 9 inch tart. homemade stock

How many of my readers can confess to having tossed a chicken or turkey carcass in the rubbish in a pang of exhaustion, in a  kitchen full of dirty dishes, after cooking a big meal? I for one do not enjoy standing and picking the meat off a carcass with my fingers.  But I also do not enjoy preparing a soup recipe only to find out, after putting lots of time into it, that it mostly tastes like the stock I bought from the store. I don’t cook a whole bird but maybe once a month, and when I do I buy very high quality poultry, so it always makes me feel terrible to throw any away.  But having it hang around also seems…

Writing about Thanksgiving after it is over is problematic, partly for reasons pointed out hilariously here.  In organizing speak, it is time for a debrief.  But in this debrief, we are only going to talk about what I liked, because I am running the show here, and I don’t plan to bore you with what I thought could use improvement.  Those who attended, feel free to let me know in the comments what you were disappointed by, just make sure you use your real name, okay?  And reporting that you hate creamed onions is not a valid critique of my particular creamed onions, so keep this in mind. I have been wanting to post here for days– since Thankgiving– er, Evacuation Day dinner– was so successful.  Since then I have been constantly composing blog posts in my head while cooking, eating, grocery shopping, dog walking.  It is kind of overwhelming all this inspiration, and a little stiffling, ironicly.  Oh, and then there is my job… that takes up some of my mental capacity as well. Spoilers and spoils

Some people cannot stand to know how a story ends until they experience it for themselves. I am that way with movies, books, and dinner parties. This is the learning-by-doing side of me that fuels this blog and the cooking that goes with it. (Yes there is pedagogy in all my projects, it seems, but we wont let that ruin all the fun.) Along the way, it is useful to engage the other more refined side of me– the planning backwards “school marm” control-driven side.
